This sauce is seriously amazeballs. Tangy and rich and the consistency is customizable, depending on how much water you want to add as you’re blending. I made mine smooth, like nacho sauce; I’m planning on using it for Mac n Chee.
Last night’s dinner (R) was an experiment in budgeting. We are broke as a JOKE so we bought $15 or so worth of groceries (chile peppers, herbs, eggs) that I’m expecting to last the rest of the week, combined with what I already had in our pantry. Night 1 seems to have worked out pretty well.
I actually ended up making a meal list of the next 3-4 days, which I think is what smart people do, unlike I who always play it by ear and cook whatever floats my boat at the time. We also usually shop like Supermarket Sweep and just grab random things. Making lists and shopping wisely makes sense too I guess.

The royal dessert chalice. 👑🏆👑 Perfectly sculpted to fit TWOOOO servings of chocolate low calorie almond milk ice cream 😬, a chopped up 1-minute coconut cupcake, and unsweetened coconut flakes. So happy I found this sucker at Goodwill for $1.77. I froze it first so the ice cream never melted 😳🙏. I HATE melted ice cream with a burning passion. So. Hayyyy 🙌. So Tom and I are doing Betty Rocker’s “Rocktober” 30 Day challenge. It’s a series of body weight exercises done in circuits, kind if like Ripped in 30. It’s been a pretty fun workout so far, but the best part is that he’s doing it as well and I have an accountability buddy.
We are going to the park by our house lately to do out exercises. It’s good times!
We’ve been REALLY good at not eating out lately. Mostly because we’re poor and I have time since derby is over for the year (for me) but it’s really nice. I’m already losing weight and not even trying that hard. Restaurant eating really is the main thing that messes me up with clean eating.
I have been drinking beers (no more than 1 pint at a time of Coop Native Amber) at home though. Because I can! Off season!
